Title: Hominy Cakes

Take 2 cups of cold, boiled hominy, 1 egg, 1 teaspoonful of salt, 1/3 cup each of sweet milk and flour. Mix well and form into cakes, 1/2 inch thick. Fry in a hot frying pan, with a spoon, using just enough grease to prevent the cakes from sticking to the pan. Cover while frying so that they will cook through. (polo, Ill.)
